you've got great advice for what you want to do so this is probably an unneccessary comment.. but if at all unsure about liquoring back post fermentation then i've often added a splash soda water to certain beers in the glass to drop down the intensity..

depends on the contribution you're looking for.. if i'm using oats i'm generally not going less than 10%..

i wouldn't worry about it being cloying if you've got everything else right

I’ve tried making my own invert sugar and it tastes nothing like the invert sugar from Ragus. If you want to brew with invert sugar, I strongly recommend getting the real deal. interesting ya say that.. i actually found the opposite in that the invert #3 we got from ragus was quite similar in flavo...

we talking like a black smudge/smut on the paper? possibly scouring the pot is damaging the stainless and causing the alloy metals (nickel) to oxidise.

i often take beers out the ferment fridge at 48hrs when i'm hammering the brewing to build up stocks, but then i know my ferments well (i tend to use consistant yeast) and it works for me at my batch sizes (10-20l). at a guess i'd imagine the ferments are more than halfway through by then and the in...

i was very disappointed with a couple of the kenridge and beaverdale reds i did. tasting at 6-8 months gave some very flat and "kit-like" wine. from what i'd read i expected better at that stage even if they could still improve. not tried the cab sav though so might be tempted to revisit if i lunch ...

good pH is around 5. i'm also thinking uou are proba ly short on yeast nutrients too. what abv drink are you actually wanting to brew? looking at your other thread i'd recommend looking at the winemaking forums as there's plenty of people doing "WOW" recipes with fruit juices. easy enough but a litt...

bread yeast ferments absolutely fine, but may like warmer temperatures than most brewing yeasts. it's (usually?) the same family as brewers yeast anyways i think. the flavour would be the main reason people don't use it much. likewise it can ferment similar strengths of alcohol to ale yeasts though ...
