Re: Dexrin and Fermentability?

Hi PeeBee This is what I need! If I can continue to believe different (non-diastaticus) yeasts have a variable ability to deal with dextrin ... ... yep, although it's not quite so straightforward as (simply) yeast selection, as in one yeast vs. another (it never is, is it? :? ) ... as White and Zain...

Re: Dexrin and Fermentability?

Hi PeeBee This one's for "geeks" to answer ... ... don't know if I'm "geek" enough, but I'll give it a go  So what is correct? ... erm, BOTH! ... just like you've said in the pre-amble to your question ... Dextrin seems to be defined as polysaccharides with about 20 glucose molecules bonded to...

Re: Magnetic Stirrer under £17

You should be fine with boiling stir bars, it's a "normal" use for them. And if you think about it, they're coated in PTFE (Teflon), which seems to survive being used in frying pans and the like. ... yeah, I think I'd gathered that, but was wondering if maybe there are stir bars ... and then there ...

Re: Magnetic Stirrer under £17

Thanks for the pointer, got mine ordered   =D> =D>

Any idea what the stir bar is made of and/or it's temperature tolerances? Basically, I'm wondering can I boil it with my wort or do I need to sterilise it separately and add it after cooling?

Cheers, PhilB

Re: I've bought the Graham Wheeler book - boil volume question

Hi IHN I've just double checked and the method calls for an 18l boil ... actually, you still haven't read ALL the instructions, IIRC Graham recommends first dissolving the malt extract in 18lts, then topping up to "full volume" (and I've seen posts by him on here where he's explained how he meant th...

Re: Cheap (is possible) Pump

Hi McMullan All the valid evidence supports rapid cooling, regardless of opinions. ... except it doesn't [-X ... as we've (collectively) ascertained, the available scientific evidence shows how ... bacterial infection is bad in beer production, and storing wort longer increases the risks from and pr...

Re: Cheap (is possible) Pump

Hi Kev So yes, chilling wort down below pitching temperature for some time does help in comparison with not chilling the wort at any stage. Whether only doing that gives better or worse results than only rapid cooling down from hot I wouldn't like to call, both do help to a useful degree; if aiming ...

Re: Cheap (is possible) Pump

Hi Kev, Not confusing, just pointing out that speed of reducing temperature is not the only factor in assessing the amount of cold-break produced, temperature reduced to (and, it turns out, amount of time held at that temperature) being other factors ... and how with three "variables to play with" c...

Re: Cheap (is possible) Pump

Hi McMullan/Jocky It was established by brewing scientists - over 80 years ago - that rapidly chilling boiled wort promotes a better fermentation ... If you're going to invoke the name of science then you need to be a bit more definite. In this case, what did they define as 'rapid'? ... 'Rapid' as i...

Re: Cheap (is possible) Pump

Hi Meaty Already posted on that basis - as above. ... Would be more than happy if someone can counter what I've already been told ... have a look there (link) ... the "nay-sayers", just about ALWAYS those who've never done no-chill (or who think just about anything that doesn't use the expensive cou...

Re: Cheap (is possible) Pump

Hi Meaty As I no chill I can't produce decent lagers/pilsners etc ... what makes you think that? Ralph de Vries doesn't appear to be a member on here anymore (his username was RdeV) and I can't find any of his historical posts any longer either :? ... but he'd won national (Aussie) homebrew contests...

Now let me see your license for pedantic harassment … ... I need no license ... but, I'll not even bother to point out the lack of validity and lack of poetry in your license  I mean my grains in a bag in less than the full amount of water, lifting the bag out and running some water through t...

Re: Grain efficiency

I think the reason I notice no loss of efficiency is what I might lose in mash efficiency I easily make up for from increased overall brewhouse efficiency. Maybe recirculation is keeping my efficiencies up too? ... erm, point of pedantry PeeBee ... but earlier in the post you've said you "don't not...

Re: 1.002 FG reading on IPA

Hi Meaty Did you dry hop? It can result in further fermentation ("hop creep", I think it's known as). ... +1 to that, hops contain enzymes that can break down otherwise unfermentable sugars and proteins in you beer, creating more sugars, more fermentation, so more alcohol :? ... it's been known abou...

Re: Choosing hops

Hi Meatymc To be clear, I wasn't after credit (I first heard about the technique on an Aussie forum, so if anyone deserves credit it's someone down-under) ... I just wanted to "throw my hat into the ring" as someone who's also taken this approach, and link to what I do (which you've adapted slightly...
