If you're "over" hopping (arguably a question of personal taste) then kviek is a more viable option because the big flavour will be from the hops and not malt/yeast. (I've tried kviek and am not blown away by it, but it's a fast way to get a beer going.) I don't pressure ferment or keg so i usually ...

That would be a good experiment but sadly not one I have space for in my fridge.

I've ordered some crossmyloof Kolsch yeast which says it will do suitable for 5 gallons. So I might just use that instead, or pitch it with the lallemand for a "hybrid"... not sure yet

Thanks for the advice. Unfortunately my local shop doesn't stock this, I got it from Malt Miller when I ordered some equipment. (Can't justify £3.60 postage for a £3.95 order though!) Thanks Dave, hopefully it'll turn out alright. I've never seen a film like that on the top of the beer but I don't make a lot of darks, don't know if that might be a factor.

Deep clean with VWP to be carried out in due course...

For anyone interested, this eventually got down to about 1.014 so i finally bottled it this week. Bit worried its still a little higher than I'd usually bottle, so will keep a close eye on them by means of frequent sampling.
