About 23-25°C would work for the starter BUT where are you going to brew the beer.

Can you maintain a steady 20c for fermentation?

How on earth do I manage without one. ? Very well I presume, but what is your point? On a brewday I use refractometer during the mash and the boil. Once the wort is in the FV I take a sample and use a hydrometer to confirm the OG. During the fermentation I use my eyes to see how things are progress...

Yeah, I brew in stock up in spring to skip July and August.

Perhaps ough to scrounge a fridge, but just started "ferment in kettle" and that is just sooo nice.

I think we need to understand fermentation in detail. Fermentation kit - what was it cleaned with & When? What yeast? what form? Starter or sprinkled? Temp? Recipe? Grain in the fermentation? Krausen? How quickly did it start? Location? Did it finish as expected? Etc etc If this is the first time so...

Kit seems to contain 2.7kg on juice concentrate. Which seems about right for the volume assuming 65brix.

I would really doubt it. The concentrated is from pressed juice.
