I use a 18mm plywood lid on my 800l copper, I doubt you'll have a problem with 2" oak!

It takes more energy to heat water than to maintain a boil. So I'd say it's so he can reduce the time required to heat the wort to temperature then, by having 3 6 and 12 he has a good range of power to choose from to maintain the boil. Spot on! Use t90 pellets. They'll drop out when you crash cool and you can run the sludge off. Easier with conicals but works with flat bottomed tanks too.

We have a 9kw and a 6kw in our's. If I had the choice I'd actually go for a 12, a 6 and a 3.

I used a 3/8" to 6mm fitting from A&B air systems in wrexham. I usually use metric fittings (then a 10mm to go on normal beer/gas line at the end) because I can pick them up anytime I want.
JG do a 3/8" BSP to 3/8" speedfit connector. Not on the computer at the moment so haven't got a link.
