Re: 1973:The Last Days of Porter

A pint of plain is still very much alive with every pub here in Ireland selling it. The two barrels of the old and the new does not exist anymore with everything being keg, but the two pour technique is still the norm with no rush at all in pouring the pint. The exactness of the amount of head and t...

Re: Dark Mild

Blimey. I thought I didn't hang about. But Omg. Credit where credit is due, that is quick. One of the advantages of mild and other low original gravity beers is they can be ready fairly quickly. Commercial brewers also look to serve beer fresh. Banks's brewery (pronounced Bonks's now brewed by Mars...

Re: BREWMATE

Yes the time is in minutes, all set to minutes that the hops are required to boil. So if you want to add a charge of hops 15 mins before the end of the boil you would enter the hop addition in g and the boil as 15 mins. Brewmate is a very good and simple programme, and you can adjust settings and ad...

Re: Yeast Starter

Simple rule for lager yeasts is to pitch big and pitch cold (8C ish) and then let it rise over 24/36 hrs to fermentation temperature 9/10C, and then have the patience to let it take as long as it takes.

Re: Controlling the flow from a solar pump

Just get a ac/dc adapter that has a variable dc setting and this way you can control the speed of the pump and the flow. I got one years ago from Asda.

Re: Beers (late 19th Century and 20th Century)

See ... not kidding! 20220429_170402_WEB.jpg . I'm committed now? They'd got no "Golden Caster Sugar" left, so I got some "Golden Icing Sugar". That has been my stock for sometime now, along with Golden Granulated which I couldn't see. I tend to use the "easier" sugars to work with "boil wise" (as ...

Re: Harvesting cider yeast

I've never done it, but I imagine it is the same as for splitting beer yeast and making up starters before use (plenty of info on here on both of these). However you would want to use a different medium, and I would suggest pasteurised apple juice instead of wort, otherwise the process should be the...

Re: British hops

At the moment I'm drinking my second brew using Ernest and really enjoying it. It has a slight new world hop edge to it without being to overpowering. Definitely going to try these if I can find them as whole hops at some point (pellets clog up my filter). Thanks for the tip. Like the idea of getti...

Re: Cellar

Yes very useful. Mine was used for coal and still has a black floor, it’s also around 12C ambient at this time of year and I get a couple of degrees cooler in the fv with it being on the floor. I store most of my gear and beer here including my fermenting fridge. As you say useful for lagers and if ...

Quite right Ian, and as well - recommending secondary fermentation  and 2 weeks primary and 2 weeks secondary, completely unnecessary in almost all instances.

Re: Sensible Mole Brewery

Col, while I admire your personal project of producing a very nice website, I think all John is saying that this is maybe trying to reinvent the wheel without all the knowledge and experience of the wheelmakers. If I were to advise anyone on brewing I would simply refer them to read Graham Wheeler's...

Sam Smith’s Old Brewery Bitter is served from oak kilderkins and the effect is profound and sublime. I tried to duplicate it once and failed badly.
Which is how Bathams distribute their beer.

Re: Mild

Like it! I try to avoid adding syrup etc, keen to stick to Manx brewing purity law and just using malts ... so any tips on substituting invert sugars, golden syrup and treacle for the real deal? Loving the chat! Most "modern" milds would have been brewed with a significant percentage of sugars or s...

I've been a bit remiss by not posting this earlier, but the following was posted on other forums as a synopsis of Ron Pattinson's research and views A SHORT HISTORY OF MILD ALE This is a bit of a synopsis from reading Ron Pattinson’s blogs and Mild book, for those interested there is plenty more rea...
