PVPP is for removing polyphenols (tannins) not yeast.

I found slowing down the sparge increases extract efficiency, as does getting the liquor treatment right.

Yes, whisky starts as a clear spirit and the colour comes from the wood...and quite possibly caramel as they're allowed to add that.

I must admit I raised an eyebrow or two! Stressed yeast will produce more esters and smaller fermenters will stress the yeast less due to pressure, but aeration/oxygenation and pitching rate will also affect ester production.

I met an ex-Head Brewer of Moorland. He fermented Old Spec. at 24 to get the esters high.

Yes, it's lager malt made from MO. I'd boil for 90 min to reduce DMS.

They dry out much quicker than slants. You can melt the agar in a microwave and make your own slants if you have universal tubes or similar.

You don't need that much yeast: 0.5 to 2 million cells per ml.
