My quick and easy AG of choice is a Guinness clone. 1 kg flaked, 500g roasted, pale malt to whatever abv you want, and about 30g of any bittering hop at start of boil. If it's chilling but not freezing reliably then either the thermostat is faulty or the refridgerant is starting to leak. They are quite a snug fit, and joined to create a rigid shelf. The bottom ones do have extra support as the heater is now mounted on a frame.
