You can't get the same results with no-chilling as you can by using late additions, so the best you can do really is to add them all as dry hop additions.

Some company's versions of certain malts are better than others. For example, Crisp's Vienna isn't that great, whereas Simpson's Vienna is fantastic. On the other hand, Crisp's lager malt is better than Fawcett's lager malt. This is of course, only MY OWN opinion... everyone has their own preference...

Yaah, the stand is rock solid... its not going anywhere.
@Wonky - I have a pizza stone thing that I slide under there when the gas is on and its fine. Have done it several times with no problems at all.

I use that burner. I use it with a 49l Vogue pot, but usually only do 5 gallon batches. It's a beast of a burner and gets my wort from high fifties after draining the tun, to boiling in less than 10 mins. It will get 30+ litres of ambient temperature water to strike temperature in about 20 mins max....

There's an Australian hop called Sylva which was specifically bred as a southern hemisphere equivalent to Saaz. It's really similar and very good, but not much use to you here as it's even harder to get than Saaz haha.
