The great debate of describing a beer online. Its impossible..Ill give it a shot. Autolysis of beer has never been proven or not proven. (I do believe it does) JMHO. I dont think that you will get any honey flavour/taste by using honey as a priming sugar. You have got to work out the sugar content of your honey

Summary on my OP Negatives:- It handles like shit. I have no control of the malt base of beers that I maybe want to brew. Reported...No documented evidence, that it might go off. If I want to brew a different style of beer, eg stouts/porters/milds etc I would have to do a partial mash, which defeats...

Wort for starters should be kept on the low side 1.020. You want the yeast to start working for a living ie looking for 02 to consume before it starts looking for sugar (wort)
There is a major difference between a "starter yeast" and a yeast that you are trying to prove that is alive and well

JMHO...you cannot replicate a water profile, as a HB`er its impossible. Im Chef not a Chemist. Brew the beers that suit your tap water. The reason I ask is because these beers Ive brewed using LME, seem very strong.

Hello, Only Me! #-o If the LME is stored in the Jerrycan for any length of time, does anything drop as sediment in the Jerrycan? Or is this pure LME and nothing drops as sediment because there is nothing in there to sediment? Please forgive my ignorance but this method of Brewing sounds good to me....

I have been asked about the ammount (25kg) and will it go off. No it wont, Ive been a Chef for 37 years, so I know about this sort of thing. Would DME make a similar Beer? It would but I dont know about the clarity. The main thing about using LME is the clarity of the brew, I mean its "crystal clear" a good adjective is "polished" Which has got me thinking....If I did want to brew a stout I would take out some of the LME and replace it ...

Costings...I think I paid £62.00 for a 25kg jerry can, cant remember, so Ill round it up to £70.00. 25kg divided by 4.2kg = 5.95 £70.00 divided by 5.95 = £11.00 per 25li brew. I worked it out by using BeerEngine. 4200g for 25li (finish) will give a ABV of 5.1%. I started the boil with 27li of wort, knowing that I would probably loose 3li during the boil. After boiling and overnight chilling I ended up with a OG of 1.056, I just back liquored to 25li with a OG of 1.050...S...
