Recently made a strong pale ale:
OG 1.065
50/50 TF mild malt/ pale malt 75 min, 2.75 l/kg @67°C
45 IBU EKG @ FWH (~3g/l)
13 IBU EKG @ Whirlpool (~5 g/l)
1 g/l EKG in the fermenter @ start
WLP026
It's still fermenting, now at 73%
It tastes, it smells, it's all marmelade.

Re: Dry hopping, terminology confusion.
Which sets me to wondering whether you'd get the same behaviour with T90s? Yes. Hop is dried carefully and the dryer they (and also malts) are the less the influence of temperature is on enzymes/proteins. 60°C would not denaturate the enzymes. Simple test, cold wort & yeast with added pellets ferme...

Re: Dry hopping, terminology confusion.
The wet hops, fresh hops or indeed green hops are not the problem. In my first brew ever in the late seventies I used fresh hops as that was what I could get, from mom's garden :) It's more about the dry part. I thought dry in dry hopping comes from drying out a beer by adding hops near the end of f...

Dry hopping, terminology confusion.
Dry hopping. Recently I read a blog by Allegash brewing where they explained dry vs. wet hopping. Using older dried hops vs. fresh wet hops. It got me confused as I'm under the impression that the meaning of dry hopping is completely different. Dry hopping is adding hops, regardless of their state, ...

Re: SEYMOUR MERIDIAN HOP TRIAL
Decoction always gives a little bit higher efficiency, but the bigger difference you see may be due to the rising of the gelatinization temperature of the starches in barley over the last couple of years. At least that is what we see in Europe. It is probably caused by the rise in temperature and th...

Re: Brewing alcohol free
… One thing I've been looking for but have not found yet is what is the sugar composition of a cold extracted wort. … Doesn't go down to "cold" but does go down to 45C. May be not what you're looking for (and you may have it?), but I do know you like this sort of stuff and I'm finding it pretty int...

Re: Brewing alcohol free
saccharomycodes lugwigii is every now and then made available to home brewers by Weihenstephan through the German hobby brewing forum. One thing I've been looking for but have not found yet is what is the sugar composition of a cold extracted wort. Malting is not the same as a hot mash? How about sa...

Re: Experimenting With Cheap Kits
Are you suggesting that I could get 2kg of liquid malt extract add some hops and choose a yeast and potentially make a nice brew? Yes. It gets as good as the quality of the LME, or DME. Tot create these both, quite a lot of energy is put in the starting wort so the products will get darker than a b...

Re: Experimenting With Cheap Kits
If you want to double the kit, with the same amount of water I assume, use the double amount of yeast. As you are thinking about LME, why start with a kit and not mix your own with LME? Easy variations are, dry hopping, different yeasts, maybe add a candy syrup instead of plain sugar (turn a pale la...

Re: Clean-in-place Spray Ball - ANY Fermenter/Keg
I use cold water + NaOH, while in use the temperature slowly rises to about 50°C, in about half an hour, due to the pump and the friction in the spray ball. So I give it some rest after two cornies.

I know. There's an interesting paper from 2010 that describes the EU guidelines versus reality.
