I was always under the impression that commercial breweries only added salts to the mash and adjusted the alkalinity of both mash and sparge liquor?

If you want to have a ball park figure of alpha acid potential, I've always found this calculator useful.
Of course, we never really know the age of the hops, just the commercial year of sale etc.

Well if anything, for me I detected a little sulphur burton edge to it but at very low level.
Not a massive ester hit like fullers

I've been sampling my first ale made with this yeast over the weekend. It's a nice yeast, nothing like WLP002 or the Fullers strain in my Beers and doesn't clear that well ,like you say, unless you cold crash for a good week I think. Not sure it offers anything extra to say Gervin/Nottingham etc. an...

I'm in complete agreement with Orlando on this. I crash cool to 2 -3 degrees C (after 5 - 7 days fermentation and transfering to Cask/Cornie etc. along with Auxilary Sodium silicate finings) and leave for a minimum 48 hours (usually 72). Once this cycle is complete, I add finings and raise the tempe...
