Example: In the past Briess told us it's 'Midnight Wheat' malt was 550 Lovibond, but now they say it is 550 SRM, when in fact it is 744 SRM.

Interestingly enough, Briess relatively recently took all of its formerly Lovibond scaled malt colors and arbitrarily declared them to be SRM scaled instead. I used to sparge, but I switched to no-sparge, and other than a yield hit to OG (requiring a bit more base malt whereby to compensate) I don't really notice a difference in the finished beers. I can't fathom the mechanism that would cause pH to rise across the boil. As Eric said, calcium should promote a drop.

I agree with Eric. Most data indicates that pH falls across the boil. And some data indicates that the higher the pH is leading into the boil, the greater the measure of the drop will be. As to the light, medium, and dark colour ranges for Crystal Malts, this is purely my guess:
5-44 Lovibond = Light
45-94 Lovibond = Medium
95-150 Lovibond = Dark
SRM = Lovibond * 1.3546 - 0.76
EBC = SRM * 1.97
