This will be no help whatever to you, but ages ago when I used to brew from kits I made a beer that had a decent head but didn't taste great. Don't be afraid to ask what might seem daft questions - we all had to start somewhere. As you say, grain brewing can produce beers as good as or better than commercial ones, but kits have come a long way since the 70s and 80s.
