I've heard that if you fill a room with spiders, eventually you'll end up with one enormous fat spider.

Capitalism works in a similar way. Then the spider buys it's way into the most powerful government on the planet.

This will be no help whatever to you, but ages ago when I used to brew from kits I made a beer that had a decent head but didn't taste great. Don't be afraid to ask what might seem daft questions - we all had to start somewhere. As you say, grain brewing can produce beers as good as or better than commercial ones, but kits have come a long way since the 70s and 80s.

I'm pretty sure that the brewing industry has driven hop growers to develop strains that produce more AA per kilo for purely commercial reasons. That's been going on for decades.
