Always used the best kits to make some great wine over the years, bored being furloughed so tried some shop bought juice to see what the fuss was about, 1.5 litres tesco apple juice, 1 litre sainsburys red grape juice, 700 gms sugar and a rose that in all fairness after 2 months was excellent 12.5 ABV

Dont you find that a lot of the recipes in Grahams book basically the same with just a few gms of say a particular malt basically only the difference, I do like most of the recipes but substitute the sugar for extra malt.

I make 300 gallons on average a year, after a year in oak barrels if I want a sparkling cider I have to add yeast as well as sugar to get carbonation as all yeast has died of boredom.

looks a very limited piece of gear with an output in beer produced that is not worth the effort, get a proven bit of kit like a grainfather, in 4 hours you have 5 gallons of wort fermenting.

Yeh, I meant just the zest and I have read the white pith is bitter, I was just going to add zest 10 min boil and same zest in vodka and add the lot in secondary with some citra hops, wouldn't the juice of the grapefruits make it to sharp?

you need to take a reading before bottling, if 1.000 or below you will have to add sugar as well as yeast to bottling bucket

Dont add yeast, produces IMO boring ciders and Perry, for the last 5 tears pressed on average 300 gallons a year on a restored twin Victorian press, scrat 24 hours before pressing and add nothing. Natural fermentation will start within 24 hours.
