I've made a few around 2% - usually quite pale & slightly hoppy but surprisingly drinkable. Trick is to mash warm & pick a low(ER) attenuation yeast.

Re: Sweet bitter
Sorry to be off topic but your soubriquet "D215 Aquitania" intrigues me and has done for sometime. Is it a French road number? If so I guess you live somewhere near Artigueloutan in department 64.
it's from a British Rail Class 40 dies...

Re: Sweet bitter
70C or even 72C mash shouldn't be a problem, though I've not gone beyond 72C myself.
As for yeast, there's various lower attenuative yeasts readily available - CML "The Firm", MJ M15 Empire Ale, S-33 or anything "Windsor" spring to mind.

Re: Placing of Inkbird Temperature Probe
I'm using an Inkbird strapped to the side of the (plastic) fermenter (under a chunk of foam sponge) & a Tilt inside it. With the Inkbird set to 18C the Tilt is reporting within +/- 1/2C of that. There's a bit of rounding going on (the Tilt works to the nearest 1F & then converts to C iirc) but that'...

Re: Crash cooling
... I also bottle and have only recently acquired any ability to crash cool, although it may be limited down to 6°C. It may sound a naive question, when trying to make the bottled beer as clear as possible, but is there still sufficien...

Re: Beersmith3 Set Up
I've given Brewfather a go this week & quite like it's setup. Easy enough to use.
I do have a preference for offline apps that I can use on my phone. So Wort (android) is still my go to starting point.
