I grind my own wheat (well its not my wheat, I got it from Chug) and to get that nutty texture, I back off the stones a bit at the end of the grind so the last 5% is course ground. Here's a loaf... with US05 and CaraMunich 160 http://i.imgur.com/2rQP8pr.jpg Whenever I do a brewday I crush up a little malt and keep it in a jar in the kitchen for breadmaking. Just a small handful adds a nutty dimension to the bread and in this case I partnered it with a little chopped rosemary.

Do some root cause, walk through your entire process. Cleaning. You've mentioned no bleach. What are you cleaning with? Water source. How long do you draw it before you brew? Do you carbon filter? most commercial breweries(tbh all the ones ive ever seen!) use a plate chiller, ergo the cold break ends up in the F.V.. Science is underway at Chez Bellebouche! Broke out a microscope for a proper look - 500x closer! First off, the undersurface of the pot here. hrm, I've got actual kitchenware with thick sandwich bases - tank-built... and never going to fail,

This pot is paper-thin and with one thing and another.. it's about to meet its maker!

I shalln't lament its passing - it has served me well!
