Ah.........
That would explain it then. I suppose the only way is to try a 5 gallon brew (presuming my trial is ok) and see if I can replicate the beer.

Pardon the silly question but wouldn't 2.5 galls leave too much space in a budget barrel? The trial I'm planning is only going into 500ml pop bottles.

So if I follow your method and steep 55g of crystal for 30 mins before the boil with 250g of dry malt and 14g of fuggles, then add the ballance of the malt with the 44g of sugar when I top up? I'm planning on doing a 1 gallon trial of OldSpeckledBadger's simple extract brew but the biggest pan I can lay my hands on at the mo is about 5 pints to the brim. Fingers crossed....... I've finally lit the blue touch paper that is a Coopers Stout. Not sure of it's genuine origins but I was told that the plastic sack it came from had Puremalt printed on it. Had a google for them and it seems they supply the brewing trade , based in Scotland somewhere

The spray malt I've got is used in food flavours and is used as is without any further processing. It's just added as one more dry ingredient to the powder blend. I think it's for for snack flavours if that's any help?
