Re: Shepherd Neame Kentish Strong Ale

It's all in the yeast. Brew lab have it. I sent it to them a few years ago. I have a recipe for their Spitfire and if you brewed that to the required gravity for "Kentish Strong Ale" am certain that it would be very similar. The yeast sample that I sent to BrewLab came from a 1977 bottle of Silver ...

Re: Water analysing.

Neil is without doubt the man to go for a 100% accurate report of all you will need to know about your water supply . Murphy's have produced some very wrong reports ( mine actually was OK when they did it ) and some of their advice for acid additions is double that required , beggars belief that the...

And the foam holds aroma superbly Eric , just a pain that an extended boil needs a kidney to be sold to pay for the energy used these days .

Re: Bottling from a keg

Brewbrite already has carageenan (protafloc) in it, so shouldn’t need any more. It does. That highlights why I am fed up with explaining. There is only a tiny amount of chondras crispus also know as (correct spelling caragheen) in BrewBright. The correct additions for 23 litres of wort are 4 gr Bre...

Re: Home grown hops 2023

A bit of sunshine and break in the rain means only one thing at this time of year - a walk round the garden to think about the year ahead. I'd like to add a few different hop varieties as at the moment I've only got Challenger, and was thinking of getting a few dwarf varieties, but the only one on ...

Re: Something Dark for Christmas.

Thanks for the comments. Had a sip today, one week from racking to plastic barrels and at near cellar temperature to find it well carbonated. Warmth is less apparent, possibly as hoped, with coffee now the dominant flavour backed by some chocolate and dried fruit. There's a little roughness still, ...
