I've got a nine tray Excalibur dehydrator, I've used it to dry hops in the past. I found that you really have to turn it down, as it dries out and crisps the edges quickly, but the centre is still damp. I hadn't come across Polymax Ltd before, the thinner tubing is cheaper than Silex, but the beefier dairy tubing is even steeper!

Checkout this post by PeeBee -> RIMS and HERMS temperature sensor position; hopefully it will answer your question. TL;DR you might want to look into putting the probe in a t-piece, on the return into the mash tun from the HERMS coil.
