Hmmm ... read the whole thread, and lots of good ideas. My turn, I suppose, if it helps: 1. Have you tried tasting the water output from your boiler and/or sparger combination before it goes into the ingredients? Your taste buds are good detectors and maybe you could use them on the raw ingredients ...

I use porridge oats all the time, 5% causes no problems at all with my set up. :) You know what, pdntc, I am going to use this combination more in the future! A quick update: The beer is off like a rocket! The krausen head on it is like a dark whipped cream and is a good couple of inches thick. I'll give it a couple more days and do a gravity test to see where it's at. It started at 1050 at a 23L length so if it drops to 1010 I'll be happy. While I'm here...

You can always add sugar, as mentioned above, but I tend to use honey to bring the SG up. I know, I know, it's a bit expensive, but the results are worth it, especially if you can get a really heavily scented honey as it leaves such a wonderful flavour and aroma in the beer.
