This document from Fermentis gives the expected alcohol tolerance for their yeast strains which suggests that US-05 in not expected to reach 9.5% ABV.

The perceived bitterness will increase once the beer has carbonated and is ready for serving.

My own opinion, after visiting the wonderful Schneider Weisse Bräuhaus in 2012, is that WLP380 fermented @ 20C will give you a closer favour profile than WLP300.
