Hello!
I was wondering if there's any reason I could not use a glass drinks dispenser to ferment in. Apart from the rather high tap and the need to make sure not to seal it?
The spigot looks like its chrome but is actually plastic.
Any thoughts would be appreciated

I have used it in the past as it was good value iirc but can't really remember what it was like or if I noticed a difference between it and british pale malts :) . The only thing I could say is that I have only ever been disappointed with one base malt and that was Bairds and was probably the fault...

Hello,
I've seen Dingemans Pale at a very good price and was thinking of trying it as a base. Would it work well as a substitute for Maris Otter in bitters, milds etc?
I like beer on the malty side and was wondering if anyone has any experience of it?

I doubt I'm going to see major improvements doing this, but I'm cursed with the compulsion to try once the idea is in my head otherwise it bugs me! I'm worried about what will happen with break material mixed with settling yeast on the bottom, but I suppose the only way to find out is give it a go. ...

Very different depending on yeast, but fairly expensive to do. Years ago working at the "b word" they did the same beer 4 times with different yeasts - English, American, tripel, something else. Thanks, I've been using it at 5 to 20% so far so I suppose at the lower end of that range it wouldn't make much difference, I'm thinking of making some darker German ales that use a lot of Munich so I think that for those I may stick to German malt if the English version tastes quite different.
