I read something not too long ago about using a Coopers Dark Ale kit with a 1.5kg can of Coopers Dark LME as the extra fermentables. I think it may have had a small hop addition also, but can't remember where I saw it. It was supposed to be quite Hobgoblin ruby ish. If I can re-find it, I'll post it...

That's always been the issue I face too, but I decided to go for it.. really glad I did as it's very drinkable, so I'm gonna make another one very shortly.. :mrgreen:

The priming sugar used is twice as much as I would use. Two grammes a litre should be plenty. So far so good. It suits my taste at the moment, but I'll know more as the months pass. I do like a head on a RIS, so didn't want to go too low. First RIS I've done, so a bit of a learning curve at present.

I tried a bottle of the Wherry last night. Wow, it's sweet and malty. It's very dark in colour, almost like a stout, but I have no idea why. Ps. Wherry taking a bit long.... I should have said "buy it a fresh sachet of yeast" thought about it but never typed it. It will be fine. I decided to bottle the Wherry just a few hours ago, but I've put it in those 500ml carbonated water bottles (such a waste to just throw them away!) as the lids...

I have to say I agree with you about that. We enjoy a drink and making all of it saves us a couple of quid. Fair play, it does make a of of sense, certainly if you can keep it up for the long term. Hmmm, 11 days now and there is still activity in the airlock. It is down around 1018 now though, so I imagine it will reach the end soon. Not much aroma to it, which I will take as a positive, as in no infection or similar. If it goes down to 1010 or so, it will be pushing close to 7% once I factor ...

I wouldn't worry too much about the BBE dates, like most food stuff its only a before before date, good choice on getting some new yeast though.
