I assumed that the same controller was being used to control fermentation.
If not how was it controlled ?

I think that the answer lies here.

Much better to attach the probe to the outside of the FV. Or even better install a thermowell.

I recommend 20 gr white sugar dissolved in a little boiling hot water and stirred gently into the 10 litres of beer before bottling. Every online calculator I have seen advises far too much priming sugar. You could even split the batch in two and try my ratio against the online calculator. Then you ...

In the past I used to do a 10 litre mash with pale malt with a gravity of 1042. Then I stored it in 1.25 litre plastic water bottles in the freezer until needed. Then I took one out and let it defrost before boiling and adding the yeast.

I have a Schmidling mill and it came with two O rings fitted to the passive roller. These perform the roll of motorising both rollers. My advice would be to fit these to your mill.
