You are now discovering the main danger of Mead... It tastes so good that it can be difficult to stop drinking it. :shock:

You are now at the hardest part, letting time it do its' thing without too much input from you.

None of mine have got past 9 months. The one at the first festival was only 3 months old. The most recent one was 9 months. The additions on top of water, honey and yeast, seem to mask a multitude of possible issues. Also I've read that sweeter meads need less time than dry meads. Having said that, ...

The trick is to start a batch every 2-3 months. That way you don't run out and you pick up a prize at the festival! :D

I think that may be too much honey. The calculation is approx 1lb of honey in a 5 gallon batch equals 1% ABV. If your yeast tolerance is 15%, 15lb of honey is medium, less honey will finish dry and more will finish sweet. This is fairly approximate but should give you a starting point. Someone with ...

First, used pet bottles as they won't break and are lighter, therefore cheaper.
Second, pack in a box rather than a tube, again this will be cheaper as the length bumps up the price.
Then check online for any courier service currently doing special offers, they do from time to time.

I use an unmodified 40 lt Buffalo and have never had an issue getting a rolling boil. I just turn the dial to "full on" and off it goes.

Maybe worth trying before you start any alterations?
