Re: Tomordgarden Kveik

I had a look at this. But how do you keep it at 40 while fermenting.

Re: Keeping Beer

The obvious one is Bière de Garde which translates to “beer for keeping”. It’s a fizzy north french farmhouse ale, like saison that you lay down for drinking later in the year.

Re: Recipe suggestions for Cascade hops

Cascade is one of those hops that goes with almost everything. I use it quite a lot with Amarillo or citra. Earlier this year I made a cracking NEIPA with Nelson Sauvin, Cascade and Chinook at flame out and the same on dry hop. You have to go easy on the chinook or it takes over. Also goes great wit...

Re: Lockdown Altbier

Yes agree with you both. I’ve been trying to get hold of a sack of pilsner malt but I keep missing the malt millers window. I’ve got some carafa. Could throw 100g in to get the colour up and some crystal. Do love a Vienna lager though. When I do get my order in at the home brew shop I was going to g...

Lockdown Altbier

Managed to get a sack of Warminster floor malted Vienna malt just before the door slammed shut on lockdown, so gonna get an Altbier on this weekend. I've got no pilsner or munich so I'm going 100% Vienna malt, Magnum for clean bittering and Tettnang for the late hop addition. Lockdown Altbier 25L Br...

Surrey Hills’ Shere Drop

Has anybody had a crack at making Surrey Hills’ Shere Drop. It was the Champion Beer of Britain last year and there is suprisingly little about it online, but enough to make a start at a clone recipe. Just wondered if someone else has already had a go. From CAMRA "Described as pale in colour with a ...

Re: Brewing plans while stuck at home

The Nussdorf St Thomas was highly recommended on a thread about favourite Graham Wheeler recipes. I bought the book to brew this and the Zum Uerige Alt. Unfortunately, every time I buy Vienna, I use it up in milds, porters and stouts as a substitute for mild malt which I can't get in Switzerland. I...

Re: Can you see if dry yeast is "alive" when re hydrating?

If you rehydrate the yeast properly and it is viable it should go milky. This is from Chris White’s book “Yeast”: 1. Warm the dry yeast to room temperature 2. Cool boiled water to 41C. Use 10x the weight of the yeast 10ml/g dry yeast 3. Sprinkle dry yeast on top. Wait 15 minutes then stir gently 4. ...

Re: Keeping Beer

I brewed a Fullers 1845 attempt at a clone many moons ago that just got better and better over 12 months. There was a hefty slice of amber malt in there which takes at least 3 months to mellow out, so it’s made for keeping. This was the recipe I posted at the time. If I did it again I think I would ...

Re: Anybody got a recipe for Manx Pale Ale?

I managed to get some Galaxy off the malt miller last month, when this years harvest finally hit the homebrew market. So I've got the hops for this. I read all that that on the website "Pale Ale Malt 1) Goldings Galaxy 2) Galaxy 3) Citra". God knows what Goldings Galaxy is - that must be a typo!! So...

Anybody got a recipe for Manx Pale Ale?

My mate has just come back from the TT raving about MPA. I think it's got Galaxy in. Is it impossible to get Galaxy hops? Somebody must be selling them somewhere!

Anybody got a decent stab at the recipe?

I agree anything bittered with Challenger is smooth loveliness. My last few brews have all been started in the kettle with Challenger. Normally I would only use Magnum, but recently just loving Challenger.

Might give Chinook or Simcoe a go with Nelson too. Sounds nice!

Re: Dry yeast reuse

I always re-use my yeast for 5 or 6 brews at least. Never had a problem and I've been doing it for years. I don't wash with acid, I just wash with water; that is, I add water to the yeast cake in the FV after racking the beer off. Give it a swirl to get it the yeast back in suspension, then leave it...
