Anybody got a recipe for Manx Pale Ale?

My mate has just come back from the TT raving about MPA. I think it's got Galaxy in. Is it impossible to get Galaxy hops? Somebody must be selling them somewhere!

Anybody got a decent stab at the recipe?

I agree anything bittered with Challenger is smooth loveliness. My last few brews have all been started in the kettle with Challenger. Normally I would only use Magnum, but recently just loving Challenger.

Might give Chinook or Simcoe a go with Nelson too. Sounds nice!

Re: Dry yeast reuse

I always re-use my yeast for 5 or 6 brews at least. Never had a problem and I've been doing it for years. I don't wash with acid, I just wash with water; that is, I add water to the yeast cake in the FV after racking the beer off. Give it a swirl to get it the yeast back in suspension, then leave it...

If you could choose one hop to brew with Nelson Sauvin what would it be?

OK I splashed out on some Nelson Sauvin, but I am shying away from single hop brews after several disappointments. I've always loved Thornbridge Jaipur, but when I came across a pub serving it on cask in Buxton recently I was a little disappointed, as I had been over the years with my attempts to tr...

Re: Azacca Pale Ale

Maybe I got a bad batch! Could see how Eldorado dry hop would help though.

Just made a NEIPA with El Dorado, Citra and Mosaic with coastal haze yeast. It’s very pineappley. Will post the recipe when I get chance.

Re: Fullers 1845

I did a very similar recipe a few years ago. From my notes and from memory it was quite harsh at first and took a long time for the amber malt to mellow out enough to be drinkable. I mean 4 or 5 months. It definitely got better with age.

Re: biotransformation's effect on taste?

Interesting article Chris. Thanks for posting. I got a NEIPA on yesterday and was planning on dry hopping after 3 days during fermentation then a second dry hop after 7 days, bottling on day 10. I haven’t dry hopped during fermentation before. My concern is that usually when I dry hop I only ever le...

Re: Azacca Pale Ale

Have to say Azacca were a little disappointing. I used 100g in the last 5 minutes and the flavour/aroma is not as punchy as I imagined; a little fruity, some pineapple, but a lemon peel citrus flavour dominates. Not what I was expecting at all. They may do well as a supporting hop with something lik...

Re: Pale ale with oatmeal?

Oats in pale ale seems to be quite popular at the moment and i've seen quite a lot of craft beers that look very cloudy on my travels. Not just dry hop cloudy. This style is New England IPA or NEIPA, where they don't add any crystal malts but use wheat or oats or both to add smooth mouthfeel and the...

American Big Red Mosaic Ale

This recipe is based loosely on Bobbers big red rye ale, but I got no rye, so certainly not a clone, but I've added special B and it is still late hopped with mosaic. Bittering with challenger for a smooth finish. I'm going big on the mosaic. This is gonna be amazing! 4.00 Kg Pale malt 1.00 Kg Vienn...

Azacca Pale Ale

Never brewed with these hops before, but read that they are meant to be great in a single hopped beer. Apparently according to the malt miller; apricot, ripe mango, orchard fruit, orange, grapefruit, pine, and pineapple. I'm drooling like homer in a doughnut shop! Gonna get this on tomorrow. 1 Kg Vi...

Re: Bramling cross Willamette combo

@mrboxpiff standard 5 gallon brew for me This has finished brewing now. Gonna rack this off the yeast tomorrow, so i can dry hop it in the week. Probably throw the pellets in Wednesaday so I can bottle it next Saturday. I don't like to dry hop in the fv because I want the clean yeast for my next bre...
