The obvious one is Bière de Garde which translates to “beer for keeping”. It’s a fizzy north french farmhouse ale, like saison that you lay down for drinking later in the year.

Cascade is one of those hops that goes with almost everything. I use it quite a lot with Amarillo or citra. Earlier this year I made a cracking NEIPA with Nelson Sauvin, Cascade and Chinook at flame out and the same on dry hop. You have to go easy on the chinook or it takes over. Also goes great wit...

If you rehydrate the yeast properly and it is viable it should go milky. This is from Chris White’s book “Yeast”: 1. Warm the dry yeast to room temperature 2. Cool boiled water to 41C. I brewed a Fullers 1845 attempt at a clone many moons ago that just got better and better over 12 months. I managed to get some Galaxy off the malt miller last month, when this years harvest finally hit the homebrew market. So I've got the hops for this. Anybody got a recipe for Manx Pale Ale?

My mate has just come back from the TT raving about MPA. I think it's got Galaxy in. Is it impossible to get Galaxy hops? Somebody must be selling them somewhere!

Anybody got a decent stab at the recipe?

I agree anything bittered with Challenger is smooth loveliness. My last few brews have all been started in the kettle with Challenger. Normally I would only use Magnum, but recently just loving Challenger.

Might give Chinook or Simcoe a go with Nelson too. Sounds nice!

I always re-use my yeast for 5 or 6 brews at least. Never had a problem and I've been doing it for years. I don't wash with acid, I just wash with water; that is, I add water to the yeast cake in the FV after racking the beer off. Give it a swirl to get it the yeast back in suspension, then leave it...
