which yeast did you use? usually S04 starts fast and finish it fast...but depends on temperature, mash temperature or the amount of complex malts (crystal/caramel) you use!!! mine is fermenting at 18ºC!! the sample was lovely, chocolate, coffee with a smokie background, realy nice!! not so dark like...

yesterday, after 10 days in the fermentor, i took a sample and had a gravity of 1014, saturday i will check it again, if its the same i will bottle it!!! but i worried with the amount of sugar i should use for priming....... 1014 its a bit high and i afraid of creating some bombs or having a fizzy p...

why not pale malt with a bit of torrified wheat or wheat malt??

Thank you for the advice, much appreciated. I’ll look into challenger…would you use it as the bittering addition then leave EKG for the later additions and dry hop? Might split the batch with some WLP023 and S-04 and see how they compare. Yes challenger for bittering and EKG for later aditions!! ch...

EKG with challenger is lovely!!! i would use wlp002 or for a bigger atenuation and clean fermentation wlp007! Personally, i would go down with the crystal to 5% max and remove the 30 minuts adtition and put one at 15 minuts!! and you should increase the IBUs, cause with a OG 1057 and estimated ABV 5...

Thanks for all the replays!! I increased the rauchmalt to the double!! everything went well, just i mesured wrong the amount of water i used for the mash (i do biab), and got one litter more!! Not a problem, more beer!! And i forgot the irish moss, but the wort was clear, and S04 floculates well, so...

No, i think my cousin had a rest of pilsen malt that he wanted to use...and with all that munich and vienna malt, has a good balance to face the hops!!
yes, 6,5% isnt that bad, but we wanted to do a 4,5-5% APA, to use as a session beer, house ale!!!
