You could definitely put some amber in if you want, it does have a quite strong flavour (have you used it in anything already?) that can add biscuity/fruitcake like taste depending on quantity. Chocolate for the roasted barley yes that should be fine as its just a small amount for colour really, Caramunich is basically a crystal malt made from munich so you dont want to replace normal munich in the recipe with it or it will be very sweet. Hmmm, Northdown sounds quite good then... I've certainly had and enjoyed all but one of those beers mentioned. It certainly sounds the kind of profile that my missus would like, so I might knock something up for her with ND being the prominent hop. I've not done a single hop beer with it. Seems to ...

Been fiddling with this recipe for a while now and might give it a go today if time permits, its a bit of a nod towards 5am Saint by Brewdog but without the mega sized dry hop and a bit of influence from one of clibits recipes for an India Red Ale hence the slightly higher IBUs. Quick question... To add some body, could you add lactose like you would in a milk stout, but counter the sweetness by adding an extra dozen or so IBUs in the boil? I know there are other ways, better ways, but is that something that would work?

Was planning on using Centennial, Amarillo and Cascade. This will be the first time I've made a hoppy American style beer.
