Hi Paddy

If I'm reading you right you have almost trebled your volume but only doubled your yeast - so maybe getting off to a slower start... also sprinkling dried yeast into wort doesn't give it the best chance of success, although I appreciate you were getting decent results before.

OK fair enough - hadn't thought of cooking something 'dry' in it. Though I have to say if I'm cooking ribs or a lump of meat I'll generally get my ceramic bbq fired up :)

Still think my comments are valid for 'wet' stews and the like.

Yes, Maillard reactions don't happen in slow cookers... I find mine useful but best to fry any meat first to get some colour on it. Same for onions etc. Also often have to transfer liquid to a pot on the hob to reduce it. Good for an unsupervised low power consuming long cook, but if you use it star...

Ended up adding another 3 grapefruits' zest to secondary. So - 6 grapefruits' zest and 2 oranges' zest altogether. ... Tastes nothing like Elvis Juice yet and I doubt I'll get the same grapefruit flavour profile as them; I just don't believe that they use zest/peel only. :) This was in a 14.5L batc...

Just realised if you always brew 23L batches then you can call it
IBU = AAU * 3

I'm not sure you can make it more simple than that :)

Simplifying a bit, maybe you could use this as a really rough rule of thumb assuming an average strength ale, with volume in L:

IBU = AAU * 70 / V

I'd be inclined to use charts for utilisation myself though!
