Brief status update. Primary is just about done. Beer has fermented out well. Good colour, clarity. Aroma? Pear and black currant notes are certainly there but far more muted than expected. I expect them to lift a little when it's carbed up. So, just to make sure I'm going to dry hop with 3g/l Seymo...

How did you calc the AA% Basically you don't. If they are green bine they are generally a lower alpha hop, Red bine higher. Yeah. Wild guess and just something I punched into my brew software when I added the big-cohona to my database. It's irrelevant really until I taste the beer. Looking forward ...

Oatmeal Ale?! Why not! I'll explain. I was trying to think of the qualities that oats bring to something like a stout. I wanted a dry beer that'll finish well - looking for good attenuation without a lot of body form a lot of crystal. So, thought I'd give a small amount of plain oatmeal a go in this...

Time for an update... I dried them, vac packed and then just last weekend got round to brew with them. Here's what I did. How about bottle stability? I have bad experience with bottled beers fermented by Fuller's strain from Wyeast. It was always overcarbonated after 6 - 8 weeks and lost all these nice flavours it had initially. That's an interesting point. I've no access to the Wyeast variant... only culturing up fro...

Posting here... to an old thread because the overall tenet is that the fullers yeast might be troublesome to cultivate? not so... Excellent thread. I've twice now hydrated up a batch of raw corn kernels and pressure cooked them to gelatinise them and then run out of time to get a brew on.

So, the corn went to the chickens and geese and I've yet to get a corn influenced APA. Soon, soon.

My guess is mineral imbalance, yeast, temp control etc. Unlikely to be a bit of wheat I'd have thought.
