If you are familiar with my turbo cider technique you will know I use low temperatures to halt the fermentation. If I let the bottles warm up again they over carb. So yes, crash it, add sugar, back to the warmth to carb and away you go!

I wouldnt worry about the hops being in the centre. The wort is moving sufficiently to get good utilisation.

As per the previous two. Mine goes in with about 20 mins to go. Yes the odd leaf sticks to it but they just rinse off later. I wouldn't want to waste 5 hours work for the risk of an infection. I'm just cleaning mine now, only a 2 minute job.

Just about to drain to the FV. The O.G. is 1054. Anticipating a F.G. around 1010 so it's going to be heading towards 6% ABV. Cant decide whether to dilute it or just have a strong one for a change.

Steeping now. Fed the spent grains to the sheep and about to turn the chiller back on.

Sounding a bit like my brew today.........the method,not the recipe. I don't see anything super weird going in as we have come to expect from a Smiffy brew!

Started sparging.
Hops will be
Target 12g for 75 mins
Cascade 20g for 20 mins
First Gold 20g for 20 mins
Cascade 20g for 5 mins
First Gold 20g for 5 mins

Steep....Cascade 20g and Amarillo 17g

Yeast Gervin
So far so good :D

Tea and cakes during the sparge. :mrgreen:

1012 sounds fine to me, might just mean you mashed a couple of degrees higher than usual, and even if it drops another 4 points in the keg after been disturbed during the syphon it's nt going to be a big issue. Sounds like you have plenty of pressure forcing the beer out. What you need is for that pressure (co2) to be absorbed into the beer. The only way I can think of is to get it as cold as possible in the fridge. You may have to forgo milk and salad for a week but.............................
