Does the the thermal cutoff switch monitor temperature independently? Or does it cut off based on what the the thermocoupler is reading?
the thermal cutout is standalone and has nothing to do with the thermocouple

Einbrewer please dont take this as a personel attack ,but can you explain which laws are being broken by using american equipment in the uk?

Are the 20l ok to use on a normal ring circuit (ie is washing machine isn’t on etc)
yep.even with the washing machine on you shouldnt have an issue.The problem isnt down to dodgy house wiring,its down to a bad connection,either in the wiring of plug or between the plug and the socket.

sounds like the plugs an elcheapo,or been damaged in a badly fitting socket,try changing the plug for a decent make like MK

im more an analogue man

Are there any uk web pages showing how to wire up pids? what make of pid have you got as the connections on the pid maybe diffrent depending on manufacturer,but its very easy. You must (must, must, must) earth all touchable electrical metalwork, use nuts, bolts and crimps to achieve this earth bond...

i have a 12-24v one and either struggling to find a solution to bring in a single 240v ps drop it to 12v
Id test it on 18v AC ,measure the current draw,then calculate a suitable capacitor size to run it off 240v,but only if i was 100% sure it was safe to do so

Aalso put a 10A fuse in the element circuit, the SSRs can fail closed circuit, as well as open circuit. care to explain what the fuse will be protecting as the ssr is open or closed circuit in normal operation,well its not as theres a slight leakage current,but that type of failure wont lead to any...

Just thinking out loud if im powering a pid off 12 volts how can i get enough umph to a element or am i gonna have to wire it slightly differently. As i know the pid will draw about an amp were as a 2kw element will need 10 the "umph" for the element comes from a separate 240v supply thats switched...

As long as you power the pid with no more than 24V and the 40A ssr can deal with a 12v DC control voltage it'll be fine

standard 10mm to 15mm jobbie will do the job,the thread on the 15mm end screws straight into 1/2 bsp
