I did mention recirculating: "Because of this, I have had to make an underback to whirlpool the runnings in to separate the debris out before pumping the wort back to the MT to recirculate for 30mins or so before pumping the wort across to the copper." You can get re-usable rubber bungs for 5l mini kegs. They have a central push through piece for if you're if using a top tap.

1mm holes. The leg height is about 20mm to keep the FB from jamming into the curved wall to base join in the steel pot.

This is very odd re the garlic/onion aroma. I've read folks finding it with Apollo hops yet i've not had it once! However, I've had occasional bottles recently of a pale ale I brew using cascade that have had a hint of onion - never been there before. Is this an American hop thing which is beginning...

I have my HLT recirc pump (kaixin thing and very nice, quiet) feeding a three way manifold with separate valves. Valve 1 open recircs, valve 2 sends the hot liquor to the mash tun and valve 3 is a sort of spare for now all though I think I'll have the outlet from my wort chiller hooked up to that so...

Bottling regime is simply. Primary ferment 19-20C 2 day diacetyl rest 21-22C Secondary 2 days in the cool if not dry hopped otherwise 4 days with dry hops kept at 19C then cooled for two days (Dry hopping warm seems to bring out more aroma, quicker - then get the beer off those hops before the grass...

I've got a Mocha Stout trial on the go at the moment, best smelling tasting version right now - just coming up to bottling day - is the version that had the nibs soaked in vodka overnight, then added 1 minute from flameout. I'd be really keen to know the strain too. My Grandfather was from Orkney (St. Margarets Hope) and I think it would be a nice surprise for my Mum for me to brew a beer in his memory.
