All depends on what's being brewed. For an American lager or perhaps a Pilsner diluting with Ashbeck or similar cheap supermarket bottled water, to reduce repent alkalinity might be worth the effort. The expense and water wastage of RO maybe a step too far.

I have exactly the same set up as Kev, very happy with it. Have to say that 7gal. rather than the 14gal. that I have, would probably have been adequate. It's cooled and heated with a modified 310 Cornelius cooler. A 7gal. Would fit a large larder fridge.

Yes it should be fine just step up gradually when you see activity but don't rush the yeast, and be patientπŸ™‚

Same yeast in both PJ & Tribute should be fine.

Seems to me all the homebrew shops should refuse to stock all Hambleton Bard Products, kits etc. That might concentrate their minds. !!!

You obviously have better inside knowledge🀨
As an aside, on yeast, they brewed a few weeks ago with Cooper's yeast from Adelaide, Aus.
Gave somewhat better outcome than a Fosters. IMHO.πŸ˜€πŸ˜€πŸ™‚

Just the clarify over the years Roger Ryman has frequently confirmed that they use their yeast both for primary and the same yeast for bottle conditioning. Rumours otherwise, are based on bottling contracts they had with others many years ago. As for yeast source don't forget Roger came from a Scott...
