As a test I brewed, fermented at 38c and took a sample to a brew club meeting 7 days later. It wasn’t the best beer I’ve ever made but was surprisingly drinkable.

I've no experience in growing hops from seed. What I do know is that the resultant plant will be an unknown entity, all of the known varieties are clones grown from cuttings or rhizomes, anything from seed is an unknown. Out of the two Altbier recipes would you make the Nussdorf At Thomas or the Zum Uerige Alt? Both sound nice but I'm leaning towards the Zum Uerige for a bit of extra bitterness. They're 51cm wide and 45cm deep, from the back of the fridge to the front of the conical is 46cm but there's enough space in the door to cover that.

It just needs some of the shelf supports cutting out. It can be awkward if you need to flip the lid catches but is doable.

We don't have a hosepipe ban here atm but last time we did I asked Anglian Water and was told I couldn't use a hose to my immersion chiller.... fortunately normal British weather resumed shortly after.

I'd look at reducing the 60 minute bittering addition ( and maybe use a different hop as suggested before) then use more Mosaic later.
