Are modern bottles stronger? They are designed for single use. Wouldn't your 70s bottles have been designed to be refilled many times?

Oxyclean is mostly sodium carbonate which is the same as soda crystals so is there any benefit over just soaking in oxyclean?

The pH of your water is irrelevant. You need to know its alkalinity. To test this get a Salifert kit. Only then can you work out how to treat it.

You shouldn't need to tie up your fermentation fridge for bottle conditioning. Just put them somewhere in the house that doesn't get too cold and they will carb up in a couple of weeks, regardless of cold crashing. I always fill at least a couple of plastic bottles so that I know if they have carbed...

I keg and bottle. I keg most beers as these are session beers and it is so much easier than bottling. Some beers only make sense in bottles (for me anyway) since they are strong and I expect them to last for a long time, even years e.g. RIS, strong ale, Belgian ales. My edition of the book has a table in the hops chapter giving the AA% of every hop as used to formulate the recipes. If your hops have higher AA% then you will calculate a high bitterness. Some varieties vary a lot between harvests.

I made a too Bitter IPA a while ago. Over time the bitterness mellowed so just give it time.

I use a 40L Buffalo boiler which has a similar element to yours and my volumes are the same. While getting to the boil I leave the lid on. Once it's boiling I take the lid off. At this point it's a very strong boil but it soon settles down to something much more rolling. I'm not aware of any problem...

I've read it's best not to use champagne yeast with beer, although I can't remember why. I'd find an alcohol tolerant beer strain.

But we are talking about home brew use where you are unlikely to drink it that quickly. That's why I use a keg with a hand pump and not a cask.
