Does anyone know whether the pH buffer solutions will keep once mixed? I would like to mix up say 500ml of each (4 and 7) and put them in plastic water bottles so that the are ready to use whenever I need them.

So if I were to dilute with just water, would I need to worry about pH? Finished beer should have a pH of around 4.5. If I mix the barley wine with a pH of, say, 4.5, with tap water with a pH of around 7.5 then the final product will have a pH of around 6. How and when do I treat for that, if at all.

I have more barley wine sitting in the shed that I am going to get through in the next couple of years. Thanks for the tips, Martin. Coincidentally, I came across one of your posts on another forum and had already decided to ditch the chalk in favour of gypsum and calcium chloride based on that. Just to clarify on your point about only treating the mash water - do you add enough just to bring the mash...

I had a little sample of this again over the weekend and it is turning into a really nice beer, one of the best I've made. It's *really* smooth and the alcohol flavour is strong but not harsh. Has anyone ever tried harvesting their yeast and drying it at home? I read somewhere about people drying their sourdough bread yeast on a tray in the sun. That wouldn't be sterile enough for beer making but am thinking something along the lines of a box with a heating element and some sort of steril...

This took over three weeks to ferment out so have just racked it out of the fermenter. FG is 1.032 and it tastes ok - quite smooth actually. A few months of conditioning in the barrel will should produce something drinkable.

I mixed up a little of this in half a litre of boiling water and it tasted, smelled and looked like wort so decided to give it a go. I had 9kg of the stuff so made a 26 litre batch of barley wine with 100g for chocolate malt and a bunch of spare hops that I had in the freezer. Came out at an OG of 1...

I use one of these 50w fan heaters and it works brilliantly for heating.
