Quite a few breweries are happy to give away their recipes, Magic Rock emailed me back with one when I asked, but publishing every single one in a detailed PDF is excellent!
They could have sold this as a book if they'd wanted too. Great move by them to release all that knowledge for free.

To clarify, I think you'll want a relay per element and the position switch will turn on the relay to the chosen element. The relay is just an internal switch to a high power device.

Yes, something to be aware of if you don't isolate the power to/from the SSR.

SSR leakage is powering the lamp.
In my controller I put a relay in front of the SSR so I could switch off power to it completely while still having the PID active.

I have three of these and first thing I did was cut the safety's off.
Even if you are being particularly dozy and start trying to open one with a bit of pressure on it you hear the CO2 escaping well before the spear is going anywhere. Not that I've ever been that daft...

I brew in my outhouse and rigged up a block and tackle type arrangement to lift and hold the bag. I leave it there while the wort heats up for the boil. A possibility if you have somewhere solid to put a D loop thing on your ceiling?
