Beer Enhancers do just that, enhance. They enhance the body and mouth feel. If you don't use enhancers, try DME plus Dextrose (which is basically what an Enhancer is) to improve the body and mouth feel. I cannot comment on health shop malt. Any of the Cooper's Lager Kits are great. Just remember to use DME instead of sugar and/or a Beer Enhancer.
Sterilising is a must.
If bottling, always use Brewers sugar to prime the bottles.
Follow these steps and the instructions and you can't go far wrong.

You could try a starter by adding some DME disolved in warm water, adding the yeast then keeping it warm until it gets a froth on top.
If it is just sitting in water I wouldn't expect it to do too much without sugar for it to eat.

I used to brew in Oz during the summer ! Most were successful, one was not !! That was from a very hot day (34Deg) and it got infected because a hot, dry wind was blowing. Unless you have a particularly warm brewing area, it should be ok. Try to keep everything (doors and windows etc) closed and/or ...

As far as the aroma hops are concerned I see nothing wrong with that. I think that would work fine. I have done much the same to add 'something' to a kit. It should ferment out the same but the overall flavour will be...erm...less wheaty !?
If that is the style you prefer over a pure wheat beer then good luck.
However, if like me you prefer wheat beers to taste like wheat beer, then it will turn out to be a compromise.
