I’ve broken the tops off bottles with my first cheap wing capper. I bought an improved model with a spring inside and used it for years before finally getting a high end Grifo bench capper.

They are nice quality and it’s a pleasure to use whole hops which are getting impossible to find.

I’ve never added enzymes or know anyone that has, but most mashes are done at 66C for 60-90 minutes. You can mash out at 75-76C if you like which will denature the enzymes for a clearer runoff. You need to do a mini mash to convert some adjuncts liked flaked barley. I’ve never done that because you may as well start doing all grain, but might be an option before diving in.

The most important parts of a recipe are percentages (fermentables and hops) and characteristics like IBU, OG, EBC etc. because everyone has a different mash efficiency. Once when I dry hopped with pellets some got into the keg and I had to remove the poppet from the post and the spring / gubbins out of the disconnect to have a clear path to serve the beer.

When I started brewing I accidentally made a virtually non alcoholic beer because the yeast stopped fermenting. It bottle conditioned perfectly so I assume it was similar to Windsor.
