Brew Like a Monk
Brew Like a Monk by Stan Hieronymus is very good. Giving many percentages and various suggestions for brewing as well as the history and practices of breweries. Stan has written other books that I have not read but others here found very informative.

I use a Jack Schmidling Mill, adjustable on one side without gearing. Schmidling's was the only roller mill on the market when I bought it around 1997 and I love it. I only use glass carboys and what's funny is that Better Bottles made from PET are becoming more popular than glass because they are much lighter and unbreakable, and cheaper since glass carboys are no longer made in Mexico (all imported from Italy now).
