I have a 3 year old batch of Brewferm Grandcru which is really nice.

The reason for it longevity it seems to me is is not only was it 9% but it was stored (lost/forgot) in a cool and dark garage were it never saw any light or extremes of temperatures.

Hi Are your % you over all efficiency, I ever only hit 75%, but I do use precrushed ? I am planning an American wheat with El Dorado hops and US-05 and one of the ideas I have been playng with is to ferment at a low temp (16c) as it is supposed to give out peachy notes at the lower temps.

This is the reason I love this forum so much.

Brewed the recipe today but upped the torrified wheat to 400g as thats what I had in stock. Was a bit chilly so I gave the Grainfather a coat.

The tweaks sound great, but I wouldn't abandon the Amber Malt entirely. 3% of the grainbill in any English ale is divine, trust me. In your case, you could replace 120g of the Pale Malt. Mmmmm, classic. Haven't gotten round to it yet, fecking flu, so I'm now looking at a grain bill of 3.38 kg Pale ...

I cool to 80c, and add. I only do that to try avoid adding additional bitterness. Just think of a freezer as a more effective/efficient fridge, you use a third party temperature controller usually but not always a STC 1000, to control the freezer which switches on and off the power to it to maintain the set temperature.
