If you can try to get your head round Bru 'n Water , it will calculate malt acidity for you and give a very good prediction of mash pH. You can then adjust your treatment to suit each recipe. It will depend on the cylinder size but if you call it 10kg each, you won't be overestimating by much.

At any point after the kettle, finings are going to strip some flavour out. I prefer not to use them. It doesn't really matter if you forget the protofloc; it's not a necessity.

Not a lot of point trying to chill it now; most of the esters and fusels are created in the early stages of fermentation. There's a good chance it will taste like paint stripper for a month or two, but age might heal it.

It'll be fine. It won't necessarily make tasty beer at those temps, but it's alright for a starter.

Thanks for the replies guys. I've had a look at the carbonation chart and it makes sense however I can't find any formula for the pressure drop along the pipe in order to get the 1-2 psi at the tap. Could you point me in the right direction please? The tube to the tap on the other side of the coole...

I would move more hops to the end of the boil. Blue Monkey beers are very big on hop flavour. I'd aim for 35-40 IBU, with most of it coming from additions in the last 30 mins.

The safety collar has expired and it looks pretty hammered. You'll have to get that serviced rather than a straight refill.
