So RO water I guess, and I'm assuming hops are simply vacuum packed (or am I assuming too much?). I used RO water years ago, just once. Worst brew ever! In a similiar vein to the Mash Tun, you want the holes on the bottom side of the pies ideally, this will reduce your deadspace. Apart from that it looks good. To be honest mine is just pushed together and has never fallen apart when mashing in. Of course for your piece of mind you can do as you suggest and make sure the fittings are not too loose.
