Hi Jim

Does this mean you're OK about air hitting your beer before racking? Or does it mean you have confidence in the CO2 layer on top of the beer keeping it safe?

One good thing about colder weather is it allows me to cool my beer in the FV before racking into a King Keg. Not something I've been able to do before for all sorts of complicated reasons. Ah, now I'm not so sure about the converter. Either the online or table one.

When I look into my refractometer the scale shows me a Brix reading of 13 is in line with a gravity reading of 1.051. The conversion table above, and the online converter give me 1.053.

Any thoughts, gentlemen?

It may be worth trying it without the racking arm. It's difficult to understand what benefits the racking arm gives in a brewbucket.

Without the racking arm the beer will still flow freely but there will be less tendency for the flow to disturb the yeast sediment--I think!

It's got 5 gallons in it, which equates to 6 US gallons.

Not too fussed about not having the airlock on. It must have a nice protective blanket of CO2 over the beer.

As other's have mentioned the SG scale (if accurate) is only valid before fermentation as alcohol distorts the figures, but there are tables to compensate for this I use a printout of an Excel calc sheet that's a modified version of one that originally came from the More Beer site Thanks--I think! ...

Thanks all

Today's boil was very vigorous. The lid was tilted on the boiler so all the steam could escape. Interestingly (to me, anyway!) the liquid lost during the boil was exactly the same as with a more gentle boil. About a gallon an hour. Must mean something, but I'm not sure what!
