Thanks, scuppeteer. Dug them out to investigate Alpha acid (6.42%), it turns out that it is a 50g pack. So it'll have to be a small batch of SMaSH. Although I may split a mash into two boils and do a side by side comparison with a more familiar hop of similar alpha acid, and the same yeast. I'm new ...

Mr. Dripping, if I recall correctly from a hazy memory from a Meet The Brewer event, Yvan de Baets of Brasserie De La Senne, said they cultivated their own strain of 'house' yeast (which he lovingly referred to as 'she') that they use across the board in all beers.

Rango. I'd only use PET bottles that have had fizzy drinks in, as they are designed to hold pressure. And, as stated, store them somewhere dark.
