Re: Dry hop - temp reduction
For me - dry hop in warm beer, then crash out when you're happy with the aroma, usually 5-7 days for me. For us-05 brews it can be useful to throw the hops in just prior to the end of fermentation, removing the need to break the protective crusty head it forms - great this time of year for keeping o...

Go all dry hop bud, keep it simple! Superior method anyway.

Re: Infection or just a poor brew??
Rob, manky... is that a Midlands term? I’m from your neck of the woods originally and still have family over your way. Didn’t you do a Keystone Brew a few years ago? Hahah, must be, like Gambole! That's the other Weatheroak... we're Weatheroak Hill. They moved out and this started up in the same bu...

Re: High temperature
Yeast thrives at 30-35c, it just doesn't give us a nice profile in beer. Lag time is usually 12-24 hours so I'd say it's beneficial to pitch around 30c. Most ale yeasts can comfortably ferment at 27c anyway, granted with a lot of esters, so don't worry!

Re: Infection or just a poor brew??
If you don't dry hop heavily usually, it can drop the pH a few points so might feel more acidic. Always hard to say without brewing water modification, but if it's manky it'll probably come through in a few weeks.

Re: Still struggling with chill haze, what cured it for you?
Clear choice malt will fix it if you want to order a full sack. Super low in polyphenols so it doesn't create a haze in the first place. The other way is to chill your beer down as low as possible, then use a fining agent. It needs to be cold as chill haze relies on the cold to occur, so the idea is...

Re: Infection or just a poor brew??
I never have any issues getting clarity out of us-05, in fact it's one of the reasons I use it. Does sound infected - sourness doesn't have many sources unless your water chemistry is way off which would also account for cloudiness.

Ah, good to know. I think mine has the holes so I'll add some extra mesh to it. Good advice!

Keg Hopper
I have a keg hopper but yet to try it out with pellets, just stuffed it with leaf.
Can anyone tell me how much i can feasibly use in there? Thinking 100g as a starting point.
Cheers!

Re: Should chilling begin at 'final gravity'?
Once it's stable you should diacetyl rest first which will basically cover the time to ensure fermentation has completed too. After that yep, chiller on, aux finings in if using - currents will stir them - lots of trains of thought on dry hopping, but I add the day before fermentation completes so I...

Re: Speeding up the process!!! (FERMENTING-DRINKING)
You've done well there. Dry hopping adds days to the brew time, think you'll get away with it though, I've had beers in fairly good nick served the day after kegging. what yeast did you use?

Weatheroak Hill Brewery / Sunshine Marmalade 4.7%
Hi all, just thought I'd share this one as it's a one off brew. It'll be round Birmingham, Worcester and surrounding festivals this summer, I don't mind giving the recipe away. Into cask yesterday and it tastes awesome. It's a golden hoppy beer with a full body, and a sort of light vinous orangey fi...
